"Heart" is what we call the tender, edible center of an artichoke — so saying it "didn't have the heart" means both lacking courage AND literally missing its best part! Artichokes are actually the unopened flower buds of a thistle plant. If left unharvested, they bloom into stunning purple flowers that can reach 7 inches across, attracting bees and butterflies from remarkable distances.
